When I came across this infographic, I just have to share. It was made by the lovely people over at Chasing Delicious and it gives a great breakdown of which oils have the highest and lowest temperatures and what application to use them for.
So while avocado oil is great for deep-frying, you are better keeping your olive oil for baking and salad dressings. I will warn you that this is not a perfect infograph. It does not take in to account if the oil is refined or unrefined. For example an unrefined sunflower oil has quite a low smoking point (about 225*F) versus a refined sunflower oil can handle up to 450*F. So don't get confused if you notice olive oil is up in the higher temperature part of the circle. The one commonly found in grocery stores is actually down at the bottom EVOO (Extra Virgin Olive Oil).
