This recipe makes a fabulous dessert or even a quick light breakfast. It's very filling but not that 'I need a nap' kind of filling.
Walnut Mandarin Parfait
3/4 cup low fat plain Greek yogurt
1/4 cup mandarin oranges
1/4 cup walnuts
1 tbsp chopped fresh mint
1 tbsp raw cocoa nibs
1 tbsp honey (Maple syrup also works well!)
1) Place yogurt in a small serving bowl.
2) Add mandarins and walnuts.
3) Sprinkle on mint and cocoa nibs.
4) Drizzle honey on top.
