1 onion, chopped
1 tbsp canola oil
6 tbsp fresh orange juice
3 tbsp balsalmic vinegar
2 tsp granulated sugar
1 tsp orange zest
1 cup of canned or fresh pitted cherries (no sugar added)
1/4 cup dried cranberries
1/4 cup dried cherries (or replace with more dried cranberries)
Salt and pepper to taste
1) Heat onions on medium low heat until soft and light golden in color (10-15 minutes)
2) Add orange juice, vinegar, sugar and zest. Reduce heat to low and cook till onions are very soft (5 minutes)
3) Add in cherries and cranberries and season to taste with salt and pepper. Cook on low for an additional 10-15 minutes until the majority of the liquid has been cooked off.
4) Remove from heat and allow to cool before serving with crackers and cheese
*** my personal recommendation ia nice goat cheese to compliment with spread.
