A lot of the baked oatmeal recipes I have found have a lot of added oil and sugar, so I played around with it and found a way to take out the oil and most of the sugar but still keep the flavor. This recipe is also great with crushed nuts and dried fruit in it.
Peanut Butter Banana Oatmeal Bake
- 3 cups quick cooking oats
- 1/4 cup brown sugar
- 1 banana (very ripe)
- 2 medium eggs
- 2 tsp vanilla
- 1/2 cup crunchy peanut butter
1) Mix all ingredients and pour into one cake round, two if you prefer thinner pieces (just reduce the bake time by 5 minutes). Bake at 350 degrees for 25-30 minutes. Serve with warm milk.
Makes 6 servings
Note: You can mix and cover this recipe for freezing. To use this recipe from frozen: place the pan in the oven at 350 degrees for 25-30 minutes. Serve with warm milk.
