Sweet Potato Chips
- Slice the sweet potato very thinly (a mandolin is best but a good knife will work too)
- Toss the sweet potato slices in 1-2 tsp olive oil for every medium sweet potato along with a pinch of salt. Make sure they are well coated. You can also just lightly spray each side with oil if you have a spray bottle.
- Place in a single layer on a baking sheet and bake in a preheated oven for 10-15 minutes at 375°F until the potato slices start to curl (This will vary depending on how moist the potato was)
- Remove from the oven and let cool for at least 5 minutes to let them crisp up. If still not crisp at this point put them back into the over for another 5 minutes and repeat the cooking process.
Once fully cooled you should seal the chips in an air tight container and keep them in the pantry. They will keep for about a week.
