And what a wonderful thing lentils are! Full of fibre, low in fat, a great source of folic acid and antioxidants. These little legumes make a great addition to any diet and they are super easy to use.
Today I'm feeling foodie, so I want to share with you one of my favorite lentil recipies. It's really easy to make. The salad dressing is the part that takes the most time, but if you prepare it ahead of time and keep it in the fridge, it's great for other vegetable dishes. If you are feeling pressed for time, you can always use a ready made salad dressing, just keep in mind they tend to be loaded with salt.
Simple Southwest Lentil Salad
1 can of lentils (rinsed and drained)
3 diced green onions
3 diced plum tomatoes
1/4 cup fresh lime juice
2 tbsp honey
3 tbsp finely chopped fresh cilantro
1 garlic clove, peeled and minced
1 tsp chopped jalapeño pepper (use canned for less heat or remove pith and seeds from the fresh ones)
1/4 cup olive oil
1. Mix all ingredients, except oil for salad dressing in glass bowl until evenly mixed.
2. Add in oil and using a whisk, beat ingredents together until smooth. Set aside.
3. In a seperate bowl, mix together the lentils, onions and tomatoes.
4. Add dressing.
