I started to get concerned I might not be getting enough vitamins so I put together this little dish for dinner one night to try and get as many vitamins and minerals into myself while my appetite was still good. Thought I'd share it as it was actually quite tasty.
-1/2 sweet potato, boiled
-1/2 can bean medley, drained and rinsed
-1 cup chopped spinach
-1/2 yellow pepper
-4 cremini mushrooms, sliced
-1/2 tomato, diced
-1/4 purple onion, diced
-1 tbsp garlic soy butter (use can use margarine if you don't have this)
- 1 garlic clove diced
-Sautee onions and mushrooms in butter and garlic tills soft
-Add in pepper, tomato, and spinach till spinach wilts
-Add in beans and potato and cook for about 2 more minutes
Covers a lot of vitamins in one go: Vitamin A, K, E, C, a couple B vitamins, iron, calcium, zinc, protein, fibre......just to name a few. Garlic is also good for fighting bacteria.
Hoping another batch will give my immune system the boost it needs to get on the mend.
