It's more of a salad than a pizza, but it makes for a great lunch.
Please note other than the hummus; I have not listed amounts for the ingredients. I did this because you will need more or less depending on the number of pizzas you want to make. The hummus makes about 2 cups though.
First! You are going to need to make the simple balsamic dressing I posted earlier. You'll be adding that on top.
Now for the pizza.
-1 can of chick peas (drained and rinsed)
-1/4 cup of olive oil
-juice from one lemon
-1 to 2 cloves of garlic diced (depending how much garlic you like)
-salt and pepper to taste
- grape tomatoes cut in halves
-Greek style whole wheat pitas
1) Blend all ingredients for hummus in food processor until smooth. Add salt and pepper as needed.
2) Spread hummus onto top of pita
3) Top with spinach and tomatoes
4) Add balsamic dressing
See? Healthy, simple and tasty all in one. Told you it was possible!
