2 parsnips, quartered and sliced
1 tsp olive oil
1/4 cup pecans halves
2 tbsp goat cheese
1 tsp dried rosemary
1. Preheat oven to 350 F.
2. Toss together cut-up parsnips with olive oil and rosemary
3. Place in baking tray and evenly sprinkle pecans and goat cheese over top
4. Roast in oven for 30 minutes and serve.
