But you're reading this article for the dressing recipe right? For anyone that attends my cooking classes, goat cheese is definitely one of my go-to ingredients in the kitchen. It has such a light and savory flavor that makes a great compliment to vegetables. It's also a healthier choice to many of the higher fat cheeses on the market. Normally I just sprinkle a little goat cheese on my salad but there is something to be said about an ultra rich tasting creamy salad dressing you can just pour on top of your favorite greens. Especially when it's a healthier option than many of the full fat creamy dressings on the shelf!
The chives help balance this recipe and give it that true summer feel. You can adjust the amount of liquid in this recipe as you see fit. I often convert this recipe to a dip by cutting down the liquid. Just eliminate the milk, switch the plain yogurt to plain Greek yogurt and add 1/2 clove minced garlic. Tada! Two recipes in one!
Goat Cheese and Chive Salad Dressing
Ingredients
1/2 cup fat free or low fat sour cream (Depending on how much fat you want to remove)
1/4 cup plain low fat yogurt
3oz plain goat cheese
2 tbsp chopped fresh chives
1 tbsp lemon juice
2 tbsp low fat milk
1 tsp black pepper
salt to taste
Instructions
1) Place all ingredients in a bowl or food processor and blend well.
Makes about 1 cup. Keeps in the fridge for about 3-4 days.
Serves beautifully on a salad mixture of spinach, kale, raspberries, sunflower seeds and roasted chicken.
