1) Flavored Goat Cheese Log
A fancy cheese board always seems gourmet and it's even more impressive when you do it yourself. What you will need is a large goat cheese log, whole grain crackers and your favorite spices. Roll the goat cheese log in your desired flavoring. A couple of good options:
- cranberries, almonds and black pepper
- mix of fresh herbs (chopped basil, chives, rosemary)
- rosemary and chopped roasted garlic
2) Cream Cheese Salsa Pinwheels
This is an easy appetizer with a lot of flavor. Just follow the recipe at this link. All you need is cream cheese, salsa and tortilla wraps. Display your creation in a nice circular pattern. Note: it's best to use room temperature cream cheese for easy mixing with the salsa.
3) Basic Fruit Crumble
Fruit crumble is always an easy dessert for a party and this version cuts out a lot of extra steps. Start with the recipe found here. To simplify things further you can use any combination of frozen fruit as long as the total amount of fruit is about 5 cups. I would recommend doing a combination of at least two fruits. A couple of good combinations include peaches and blue berries, strawberries and cherries or raspberries and pineapple.
4) Coco Balls
It's hard to say no to chocolate. It's even harder to say no to chocolate and peanut butter! This recipe takes no time to throw together and can be made a head and frozen until ready to serve. I would suggest if you have time to place a toothpick in each one for easy grabbing. If you want to make them even more festive, try rolling them in shredded coconut for a cute snowy effect.
5) Curry Bean Dip
Every good party needs a dip and this recipe delivers. It serves best with a side of warmed up pita chips and veggie sticks. Can be made ahead of time.
Hopefully these ideas will take some of the planning stress away. Happy eating!
