Apparently they have a restaurant downtown where they serve these creations and after watching this I just have to try it. To turn watermelon into tuna seems mind boggling.
I can only imagine what the menu looks like. This style of cooking is sometimes refered to as molecular gastronomy. The term was originally intended to refer to the study of food on a chemical level. Now it's an entire form of cooking. There are great examples of this kind of restaurant in Barcelona Spain called Alkimia and Comerc 24. If you ever happen to be travelling there I'd suggest checking them out.
