Four Ingredient Arugula Salad
- 4 cups fresh arugula
- 1 lemon
- Place the arugula in a serving bowl.
- Squeeze the juice from the lemon onto the greens being mindful not to drop any seeds in.
- Add a good pinch of salt and about 4-6 generous turns of fresh ground pepper.
- Toss together well and serve.
**You can also add a little bit of the lemon rind into the salad with a zester to brighten up the salad further. If you wanted to add the grapes and Parmesan that I suggested above I would add no more than a tablespoon of Parmesan and about 3/4 cup of grapes sliced in half. Avocado is a nice touch too.
